Sweetwater head chef Kirsty Hess continues to build on his passion for the hawker-style street market food. Her share plates pack a punch with a diversity of flavours influenced by seasonal produce and a focus on substance over style. With small dishes, including tempura cuttlefish with prickly ash, chilli, coriander and spring onion, to more substantial offerings, including roast duck with eggplant, shanghai noodle and aromatic Chinese wine, every palate will be delighted by her offerings.
